This video shows the step-by-step process of how to dice an onion like a professional chef. The technique is helpful for professional chefs with commercial kitchens as well as home cooks with limited counter space.
Keeping an onion together as it is cut will help keep you from crying as much as if the onion were cut and spread all over the cutting board. The technique of keeping it together takes a little time to master. The secret in keeping the onion together is how the knife is held…only the tip of the knife is touching the cutting board. If I use the whole knife, the onion would stick to the knife and pull away as the knife cuts though the onion. So, make sure only your knife tip is on the cutting board before slicing through.
