Spicy Garlic Naan Recipe

This recipe can served with your favorite Indian food, folded like a taco with grilled lamb, tomatoes and feta, or can be eaten (as is) with a tossed salad. Whichever you choose, make extra to share…It’s so tasty!



Dough Ingredients:

150 grams sourdough starter

1 teaspoon olive oil

Mix the above together.


75 grams bread flour

1/2 teaspoon salt

1/2 teaspoon sugar

3/4 teaspoon baking powder

Mix the above together.


Dough Procedure:

Add the flour mixture to the starter mixture until a ball is formed.

Knead 8 minutes

Shape into a tight ball.

Place 2 drops of olive oil in a resealable plastic bag.

Put dough ball in bag, seal and let rest 20 minutes.

Remove dough from bag and shape into a tight ball

Put dough ball in bag, seal and let rest 20 minutes.

Remove dough ball and divide into 2 balls, shape each into a tight ball.

Put dough balls in bag, seal and let rest 20 minutes.

Preheat an iron skillet (seasoned) to 350-375 degrees. (a pretty hot skillet)

Remove each dough ball from the bag, stretch to a thin-even flatbread (about 7 inches in diameter).

Place the dough directly into the hot skillet and cook on each side until brown.

Top with the following Spicy Garlic Mixture.


Spicy Garlic Mixture Ingredients:

1 tablespoon olive oil

1 garlic clove (sliced thin)

1 garlic clove (minced)

1 serrano pepper (sliced thin)

1 tablespoon parsley (sliced thin)

1 tablespoon scallions (sliced thin)

salt and fresh ground black pepper to taste


Spicy Garlic Mixture Procedure:

Mix the above together and let sit for at least 1 hour.



Some people like their naan browned, while others like some charred bubbles. I like both, but prefer the black charred bubbles on mine. I like the crunch and flavor.
